grilled lemon pepper shrimp skewers & hobo corn

is there anything better in the summer than jersey corn? is there anything that couldn’t be made better by the presence of grilled shrimp? what if i told you that the total cost for this meal (for 2) was $4.31? i thought so.
1/2 lb. of large raw shrimp (14-16 ct.)
2 tbsp. lemon juice
1 tbsp. olive oil
1 tsp. sea salt
1 tbsp. fresh black pepper
parsley flakes
1. peel & de-vein shrimp.
2. in a medium-sized bowl, combine with lemon juice, olive oil, sea salt & fresh black pepper. add parsely flakes for garnish. mix well.
3. place on skewers, then place on grill for 2-3 minutes per side, until shrimp forms a nice crust on the ends.
hobo corn is the easiest (and in my opinion, best) way to grill corn. basically, peel off one layer of husk and tear the silk from the top of each ear. then just throw it on the grill, turning every 6-7 minutes until all sides are fully scorched. using this method, as the corn cooks the silk is burned away and the natural sugars within the corn caramelize. this makes for an extremely sweet tasting corn that tastes fantastic even without salt or butter.
