hand over your leftovers and no one gets hurt

if you’ve ever been to a diner with me, you know that nine times out of ten i will order a platter of chicken croquettes. i know, i’m disgusting. anyway, with all the leftover turkey in my refrigerator i decided to put together a turkey croquette recipe (this makes 4 medium croquettes, serves 2):
2 cups diced turkey
1 cup brown rice
1/2 medium onion, chopped
1/2 tsp thyme
1/4 tsp tarragon
1 tsp parsley
1 cup bread crumbs
3 eggs, beaten
1. mix turkey, rice, onion, herbs & 1 beaten egg in large bowl.
2. make a ball of the mixture about the size of your palm.
3. dip ball into a small bowl of beaten eggs and coat well.
4. roll ball in bread crumbs until covered.
5. place into greased or non-stick baking pan.
6. bake at 350 degrees for 20 minutes.
considering it’s not deep-fried, the results are quite tasty. it would have been even better mixed in a food processor with leftover stuffing instead of brown rice. ahh, gluttony - it’s why the rest of the world hates us.
