seafood scampi with garlic over wheat pasta
Published by james February 1st, 2007 in recipes for monkeysdoesn’t all scampi have garlic in it? anyway, this was pretty easy to make and it came out amazingly well. from the original recipe on about.com i swapped out magarine for butter, whole wheat pasta for regular, it doesn’t seem to make a difference.
1/2 package of whole wheat pasta, cooked and drained
1 stick margarine
1/4 cup white cooking wine
4 large cloves of garlic, chopped
8 ounces mushrooms, cut into quarters
3/4 lb. large jumbo shrimp
1/2 lb. bay scallops
salt & chopped parsley
it’s a good idea to do all your washing, peeling/de-veining and chopping while the water is heating up. by the time it’s time to add your pasta, you can start cooking as directed below and everything will end at pretty much the same time:
1. melt margarine in large saucepan.
2. add garlic and sautee.
3. add mushrooms and white wine, cover & cook for 2 minutes or until mushrooms are slightly brown.
4. add bay scallops, cover and cook for 1 minute.
5. add shrimp, cook for 2 minutes on each side.
6. add salt & chopped parsley to taste.
7. pour over pasta and mix.
this is the first recipe i’ve posted in a while. to be honest, i have been cooking but i haven’t been making much that’s warranted a recipe entry, and the dishes that have i either forgot to write down or didn’t have my camera around.
