great meal for a cold day! the smells and heat filled the house. this is another slightly modified men’s health recipe; i added carrots, onion & garlic. serves two.
1 whole chicken, 3-4 lbs.
1 1/2 lbs. potatoes
4 carrots
1 large yellow onion, quartered
4 large cloves garlic, whole
6 tbsp olive oil
1 tbsp rosemary
1 tbsp thyme

the chicken tenders recipe is taken from the men’s health forums, the potato salad recipe is adapted slightly from one i found on epicurious. both turned out really well. the cereal definitely makes for a sweet, grainy yet somewhat clean breading. i double breaded some of the chicken to see if there was a difference [...]
