chicken tenders & potato salad
Published by james February 6th, 2008 in recipes for monkeysthe chicken tenders recipe is taken from the men’s health forums, the potato salad recipe is adapted slightly from one i found on epicurious. both turned out really well. the cereal definitely makes for a sweet, grainy yet somewhat clean breading. i double breaded some of the chicken to see if there was a difference and i didn’t notice any. potato salad could have used a bit more mayo but really, what couldn’t use more mayo?
chicken tenders
1 lb boneless chicken breast, cut into tenders and fat removed
2 cups of fiber one cereal
1 egg
1/4 cup of low-fat milk
organic bbq sauce of choice (i used annie’s)
1. grind cereal in blender.
2. beat egg and milk.
3. take piece of chicken, dip into egg wash and dredge one end in cereal. take dry hand” grab coated end of chicken and dredge the other end. put aside.
4. cook chicken in olive oil in a medium-sized pan. when chicken looks “soggy”, it’s time to turn it over.
5. place cooked chicken in baking pan. brush with bbq sauce and bake at 350 degrees for 10 minutes.
potato salad
2 lbs red potatoes, cooked
1 tsp salt
1/2 tsp white pepper
3 hard-boiled eggs, chopped
1 cup chopped celery
1 tbsp chopped parsley
1 tbsp chopped dill
1 tbsp yellow mustard
1/2 cup light mayonnaise
1. boil potatoes, chop and season well with salt and pepper.
2. mix with other ingredients.
2. chill in refrigerator for 30 minutes.
