for aaron & beth’s new year’s party i made a turkey lasagna that did not hold up very well upon reheating. it was like eating an old shoe in tomato sauce. luckily everyone else’s entrees were great and in particular, aaron made a ridiculously amazing corn casserole from one of his sister’s recipes. monica was skeptical until she tried it. a few weeks ago i tried my hand at new year’s dinner redux.

turkey lasagna

1-1lb lean turkey
32oz spaghetti sauce (i used ragu organic roasted garlic this time)
1 pkg whole wheat lasagna
1 egg
16oz ricotta cheese
1 cup mozzarella cheese
1/2 tsp salt
1 tbsp oregano

1. cook lasagna according to package instructions.
2. in a pan, brown turkey until cooked and drain.
3. add spaghetti sauce to turkey, simmer for 10 minutes.
4. pre-heat oven to 350 degrees.
5. mix egg, ricotta cheese, salt & oregano until fluffy.
6. in a baking dish, put down a layer of turkey & sauce followed by a layer of ricotta and mozzarella.
7. lay three (3) lasagna noodles on top.
8. repeat steps 6 & 7 until dish is full.
9. on top of final layer of lasagna, cover with the rest of the mozzarella.
10. cover dish with foil and place in oven.
11. cook for 30 minutes covered; remove foil and cook for another 15 minutes.

corn casserole

1/2 can of corn, drained
1/2 can of creamed corn
8oz sour cream
1 pkg corn muffin mix
4 tbsp of butter, melted

1. pre-heat oven to 375 degrees.
2. mix ingredients and pour into baking dish.
3. bake for 45 minutes.
