roast chicken & new potatoes
Published by james February 12th, 2008 in recipes for monkeysgreat meal for a cold day! the smells and heat filled the house. this is another slightly modified men’s health recipe; i added carrots, onion & garlic. serves two.
1 whole chicken, 3-4 lbs.
1 1/2 lbs. potatoes
4 carrots
1 large yellow onion, quartered
4 large cloves garlic, whole
6 tbsp olive oil
1 tbsp rosemary
1 tbsp thyme
salt & pepper to taste
1. preheat oven to 425 degrees
2. mix oil, herbs, salt & pepper in small bowl.
3. cut potatoes into 1″ cubes & carrots into 1-2″ pieces
4. toss potatoes, carrots, garlic & onion with half of the olive oil mixture in roasting pan
5. place chicken in roasting pan, breast side up. salt & pepper.
6. bake for 20 minutes.
7. after 20 minutes, baste chicken with half of what’s left of the olive oil mixture and toss vegetables.
8. lower oven temperature to 325 degrees and cook for another 20 minutes.
9. after 20 minutes, baste chicken with remainder of olive oil mixture.
10. bake for another 20 minutes or until chicken is completely cooked.
