great meal for a cold day! the smells and heat filled the house. this is another slightly modified men’s health recipe; i added carrots, onion & garlic. serves two.
1 whole chicken, 3-4 lbs.
1 1/2 lbs. potatoes
4 carrots
1 large yellow onion, quartered
4 large cloves garlic, whole
6 tbsp olive oil
1 tbsp rosemary
1 tbsp thyme
