great meal for a cold day! the smells and heat filled the house. this is another slightly modified men’s health recipe; i added carrots, onion & garlic. serves two.
1 whole chicken, 3-4 lbs.
1 1/2 lbs. potatoes
4 carrots
1 large yellow onion, quartered
4 large cloves garlic, whole
6 tbsp olive oil
1 tbsp rosemary
1 tbsp thyme
salt & pepper to [...]

the chicken tenders recipe is taken from the men’s health forums, the potato salad recipe is adapted slightly from one i found on epicurious. both turned out really well. the cereal definitely makes for a sweet, grainy yet somewhat clean breading. i double breaded some of the chicken to see if there was a difference [...]

square meals

for aaron & beth’s new year’s party i made a turkey lasagna that did not hold up very well upon reheating. it was like eating an old shoe in tomato sauce. luckily everyone else’s entrees were great and in particular, aaron made a ridiculously amazing corn casserole from one of his sister’s recipes. monica was [...]

holy guacamole

if it takes you longer than 15 minutes to put this together you should seriously consider throwing out all of your dinnerware and resign yourself to a lifetime of pizza delivery:
two avocados, cut & peeled
1/2 cup onions, chopped
2 large cloves garlic, minced
1/4 tsp ground cumin
coarse salt
1 tsp lime juice
if you like your guacamole spicy, add [...]

doesn’t all scampi have garlic in it? anyway, this was pretty easy to make and it came out amazingly well. from the original recipe on about.com i swapped out magarine for butter, whole wheat pasta for regular, it doesn’t seem to make a difference.
1/2 package of whole wheat pasta, cooked and drained
1 stick margarine
1/4 cup [...]

here’s a vegetable lasagna recipe with no tomato sauce that i cobbled together from a couple of recipes. feel free to throw in zucchini, squash, whatever. it’s all drowned in cheese anyway!

1/2 cup heavy cream
1 egg

if you’ve ever been to a diner with me, you know that nine times out of ten i will order a platter of chicken croquettes. i know, i’m disgusting. anyway, with all the leftover turkey in my refrigerator i decided to put together a turkey croquette recipe (this makes 4 medium croquettes, serves 2):
2 cups [...]

shut up or i’ll tilapia!

been a while since i’ve posted any recipes. here’s one i use when i have zero time or energy - tilapia is a great fish for sauteeing, sells for around $1.50 per filet, goes well with just about anything and is really light and non-fishy. best of all, it won’t stink up your house like [...]
